Parmesan broccoli quiche recipe :

Ingredients:

  • 1 teaspoon salt, divided
  • ¼ cup plus 2 tablespoons canola oil, divided
  • 2 tablespoons milk
  • 1 pound fresh broccoli, chopped
  • 1 onion, chopped
  • 2 eggs
  • 1 cup plain yogurt
  • 1/2 cup dried milk
  • 1/3 cup Parmesan cheese, grated

Instructions:

  1. Place the flour and 1/2 teaspoon of salt in a mixing bowl.
  2. Add 1/4 cup of canola oil.
  3. Pour in the milk and mix with a fork until a dough forms.
  4. Roll the dough out on a lightly floured surface to fit a 9 inch pie plate.
  5. Place about 2 tablespoons of water into a small saucepan.
  6. Heat the water on medium heat just until boiling.
  7. Add the broccoli and cover.
  8. Cook the broccoli just until tender about 5 minutes.
  9. Drain the broccoli well.
  10. Place the 2 tablespoons of canola oil in a small skillet over medium heat.
  11. Add the onion and cook until just tender about 5 minutes.
  12. Drain the onion and stir into the broccoli.
  13. Place the eggs in a large mixing bowl and beat slightly with a fork.
  14. Add the yogurt, dry milk and 1/2 teaspoon salt.
  15. Stir well to completely combine.
  16. Add the onion and broccoli and stir to combine.
  17. Pour the mixture into the pie dough.
  18. Preheat the oven to 375 degrees.
  19. Sprinkle the top of the quiche with the Parmesan cheese.
  20. Bake 30 minutes until firm and just starting to brown on top.
  21. Allow to stand 15 minutes before serving
