Salmon broccoli quiche recipe :
Ingredients:
- 1 pie shell (9 inch) unbaked
- 1 bunch fresh broccoli, chopped
- 1 tablespoon butter
- 1 (16 ounce) can salmon, drained well
- 1 cup Monetary Jack cheese, shredded
- 3 eggs
- 3/4 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Fresh parsley, chopped

Instructions:
- Preheat oven to 400 degrees.
- Place the unbaked pie shell in a 9 inch pie plate.
- Bake on the middle rack of the oven for 5 minutes.
- Remove from oven and turn the oven temperature down to 375 degrees.
- Place 2 tablespoons of water in a saucepan over medium heat.
- Bring the water to a rapid boil.
- Add the broccoli and cover.
- Bring back to a boil, reduce heat and cook about 8 minutes or until just fork tender.
- Drain the broccoli well.
- Flake the salmon with a fork into the bottom of the pie shell.
- Add the broccoli.
- Sprinkle the cheese over the top.
- Place the eggs, milk, salt and pepper into a mixing bowl.
- Beat until well combined.
- Pour over the top of the quiche.
- Sprinkle the fresh parsley over the top.
- Bake 30 minutes or until firm.
- Allow to stand 10 minutes before serving.
